Buffalo Chicken is is usually served fried and coated with a tangy and spicy sauce.  But, not today!  Just shred the chicken and it can be used in everything from sandwiches to wraps to salads and more.
 
My Instant Pot Buffalo Chicken is a versatile recipe that’s great for making quick lunches or dinners.

Ingredients You’ll Need To Make Buffalo Chicken In Your Instant Pot

  • 2 pounds boneless skinless chicken breast
  • 1 cup chicken broth
  • 3/4 cup buffalo sauce

Change sauces to make it spicier or more mild.

How To Make Buffalo Chicken In An Instant Pot

  1. Add chicken, broth and 1/4 cup buffalo sauce to Instant Pot
  2. Cover, seal and set to high pressure for 12 minutes
  3. Allow at least 5 minutes for natural pressure release then turn valve to release remaining pressure
  4. Remove chicken to a separate bowl and shred
  5. Mix with additional buffalo sauce and 1/2 cup of the cooking liquid
  6. Discard remaining liquid

Portion chicken into resealable freezer bags, label, freeze, and use within 3 months.

Pro Tips…

Make your chicken as spicy or mild as you want by choosing a different sauce.  
 
This recipe can easily be doubled or tripled to have chicken on hand.  Who doesn’t need a little help on busy evenings to make a quick meal?  
 
When you meal prep Buffalo Chicken, portion the chicken into resealable freezer bags and store in the refrigerator for up 3 days or the freezer for up to 3 months.
