Sweet Potato Breakfast Bowls

A breakfast that will truly sustain you! This bowl is filled with nutrition packed kale, sweet potatoes, tasty homemade sausage and topped off with an egg of your choice. Perfect for prepping ahead.

Sweet potatoes aren’t just versatile, they are loaded with health benefits.   Adding kale to the mix makes them healthy AND delicious!

Considered super foods, sweet potatoes and kale and contain antioxidants that protect your body’s cells from damage.  They boost your immune system!

Sweet potatoes are packed with vitamins and can be eaten every day.  Just one sweet potato contains more than the recommended amount of Vitamin A that you need to consume daily to maintain healthy eyes, bones, and skin.  

Kale is nutrient-dense, and therefore considered one of the healthiest foods on the planet.  It contains calcium, magnesium, and potassium… minerals that most people are lacking in their diet.  

Adding kale (plus sausage and egg–protein!) to the sweet potatoes in these breakfast bowls will give your active family the jump start it needs to conquer the day.

How To Make Sweet Potato Breakfast Bowls:

  1. Heat olive oil in skillet over medium high heat and add kale
  2. Saute until tender and add salt and red pepper flakes to taste
  3. In another small skillet, cook two eggs to your liking, I prefer sunny side up
  4. Layer bowls with cubed sweet potatoes, kale, sausage patties and top with a cooked egg

Pro Tips:

  • Prep Ahead!  Make assembling breakfast bowls a snap by using pre-made Air Fryer Sweet Potato Cubes and Air Fryer Sausage Patties
  • If you’d like to prep ahead your egg I’d suggest soft or hard boiled
  • Take a bowl to work with you for a sustaining breakfast or lunch 
  • Add extra veggies or eggs if desired
  • Swap spinach for kale if desired but be sure to drain any excess liquid so that your potatoes don’t get soggy
  • Add chopped garlic when cooking up the kale.  More health benefits… and YUM!
