Can you believe you only need 3 ingredients to make a tasty side for breakfast, lunch, or dinner? The air fryer can really change up how you incorporate simple veggies into your meals!
- Sweet potatoes – Use 1 pound of sweet potatoes (approximately 2 large potatoes or 3 medium potatoes) to fit in an average-sized air fryer basket. When making cubed sweet potatoes, I prefer to remove the skin so they will cook evenly and achieve a crispy outer texture.
- Olive oil – Olive oil is a great choice to achieve a semi-fried taste and is much healthier than typical oils used for deep frying. Olive oil also works well in the higher temperatures used in the air fryer.
- Pink Himalayan sea salt – You might wonder if the salt variety is really that essential to the recipe – it is! This distinctly pink salt contains minerals and flavor that you won’t find in your average table salt. It’s a great staple to elevate your vegetable sides!
A note on sweet potatoes:
For this recipe, use a sweet potato that will hold its shape while cooking. (By the way, did you know there are hundreds of sweet potato variations?)
Choose something like a Beauregard, which is the typical sweet potato found in most grocery stores. Feel free to experiment with other types of sweet potatoes as well. Some varieties hold their shape better for frying and roasting, and some are better for mashing.
How To Cut a Sweet Potato
The sweet potato cubes certainly don’t have to be cut perfectly, but here’s a simple method to get the most uniform sizes:
- After peeling the potato, slice off the two ends with any spots or roost remnants. (Tip: Make sure to use a sharp knife – it makes all the difference in chopping veggies evenly.)
- Then, slice the rounded or angled edges off the potato lengthwise so you have a rectangular block left.
- Cut the potato into strips lengthwise, then slice cross-sections to create cubes. You can also chop up all the extra angled edges into even bites.
How To Make Sweet Potato Cubes In The Air Fryer
- Peel sweet potatoes and cut them into ½ inch cubes.
- Toss the potatoes with olive oil and salt and place them in the air fryer basket.
- Cook at 400 ℉ for 10-12 minutes until browned and crispy on the outside and tender on the inside, shaking occasionally.
Pro Tips:
- Make sure you don’t overload or crowd the air fryer basket with sweet potatoes. There needs to be room for the air to flow around them to make them crispy.
- Cut the potato cubes as uniformly as possible to ensure even cooking in the air fryer.
Seasoning Variations
Sweet potatoes work with quite a range of seasonings, and you can make them sweet, savory, or spicy! I used a really simple salt seasoning, but you have so many options depending on how you plan to serve them.
- Try herb and garlic seasoning to pair with meat, fish, and other veggie sides.
- Try a bit of cinnamon on the potatoes in the air fryer and sprinkle some brown sugar when ready to serve.
- Make a cajun side of potato cubes with homemade Cajun Seasoning.
- Use your favorite all-purpose seasoning to serve potatoes with breakfast foods or as a side for grilling and BBQ.

Air fryer sweet potato cubes are a great side for lots of options!
Create a breakfast bowl with the potatoes by adding some scrambled eggs and your favorite breakfast meat like sausage or bacon.

Storing and Reheating
Store leftover sweet potato cubes in an airtight container in the fridge for up to 3 days. The best way to achieve a similar crispy texture when reheating is to pop them back in the air fryer for a few minutes on a lower heat setting (around 275 ℉).
