This is a basic and essentially traditional risotto recipe using parmesan cheese and it goes well with many main dishes.  If you struggle to find side dishes to serve that your family will enjoy, this will be a great one for you to try.  I’ve made risotto the traditional way on the stove, in a slow cooker and now in the Instant Pot, and I have to say, this might be the winner.  It’s practically hands off and still turns out delicious and with the texture that risotto should have.  Next time you are searching for a side dish that is easy to make but impressive to serve, try my Instant Pot Risotto!

What is risotto made from?

Risotto is made from a short grain rice called arborio rice.  It’s very starchy, and the process involves a lot of stirring when make the traditional way.  By adding hot broth or stock to the rice and stirring continuously  you end up with a sort of creamy rice dish.

It can be a bit tricky, because you’ll want to make sure it’s done al dente so that you don’t end up with mush, but using the Instant Pot to make it can help take out any guess work.
