What is risotto made from?
Risotto is made from a short grain rice called arborio rice. It’s very starchy, and the process involves a lot of stirring when make the traditional way. By adding hot broth or stock to the rice and stirring continuously you end up with a sort of creamy rice dish.
It can be a bit tricky, because you’ll want to make sure it’s done al dente so that you don’t end up with mush, but using the Instant Pot to make it can help take out any guess work.
How to make risotto in an Instant Pot or pressure cooker:
While there are a few steps, the amazing part is that it can be done all in one pot and comes together really quickly. To make risotto in the Instant Pot you’ll:
- Heat the pot to sauté and cook the onions and garlic in olive oil
- Add the rice and stir to coat in oil
- Add the broth and seasoning
- Pressure cook for 6 minutes
- Stir in the cheese!

Ingredients
- 1 1/2 cups arborio rice
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 3 garlic cloves
- 3 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 cup parmesan cheese
Instructions
- Heat olive oil in pot on saute function
- Add onion and garlic and saute until softened
- Add everything but cheese to pot and cover and seal
- Set to high pressure 6 minutes
- Quick release and stir in cheese before serving
