What’s To Love About This Recipe
- The air fryer produces a crispy exterior yet fluffy interior! It’s truly a magical gadget for healthier “fried” foods!
- Ditch the deep-fried grease and enjoy minimal oil use in this recipe. You won’t end up with a greasy mess, and because of the simplicity, you will be more likely to make these again and again.
- Potato wedges are easy to season and customize to fit the dish or dipping sauces you prefer.
- Crispy potato wedges are the perfect side for burgers, sandwiches, and more. With the air fryer, you can free up other appliances and stay hands-free!
- Not only is this a budget-friendly side dish, but it’s also made with simple pantry staples. Whenever you need a quick side, it’s easy to whip this up!
Ingredients Needed
- Red-skinned potatoes – Use 1 pound of red-skinned potatoes (depending on size, this may be anywhere from 4 to 8 potatoes). Red-skinned potatoes are a great choice for wedge slices, as they have a thinner skin that doesn’t require peeling and hold their shape well during cooking. They also have a creamier texture than typical baking potatoes, which makes for an excellent bite.
- Olive oil – Olive oil is a healthier cooking oil that adds flavor and helps achieve a golden, crisp texture on the outer edges of the potatoes.
- All-purpose seasoning – This seasoning is a great choice to pair with a wide range of flavor profiles. Even though it’s all-purpose, it’s definitely not bland! With the oil, the seasoning sticks to the potatoes, adding a little extra texture as well.

How To Make Air Fryer Potato Wedges
- Wash and scrub the potatoes, then cut them in half lengthwise.
- Next, cut each half into quarters, also lengthwise.

- Toss cut potatoes with oil and seasoning in a bowl.

- Place the wedges in a single layer in the air fryer basket.

- Cook in the air fryer at 380 ℉ for 15-20 minutes until browned and crispy on the outside and tender on the inside, shaking every few minutes to ensure even cooking.

Pro Tips
- Optional: Soak the uncooked wedges in cold water for at least 30 minutes before air frying for maximum crispiness.
- Avoid boiling the potatoes before air frying. In this recipe, this step is unnecessary and may cause soggy potatoes.
- Be sure to leave space between the wedges for proper air circulation and don’t overcrowd the air fryer basket.
- For more even browning, flip the wedges halfway through cooking.
- Potatoes are done when they are golden brown and fork-tender.
- For crispier wedges, slice the potatoes thinner. Slice the wedges thicker for a more tender potato.
- I do not preheat the air fryer for this recipe, so if you choose to do so, you may need to reduce the cooking time slightly. The overall cooking time will depend on the thickness of the wedges.
Recipe Substitutions and Variations
This is a great base recipe for crispy potato wedges, and you can change up the ingredients to achieve the perfect balance of flavor and golden-brown crispness.
- To vary the potatoes, try peeled sweet potatoes or Yukon gold potatoes.
- Avocado oil has a high smoke point, allowing for a deeper browned or crispy exterior. It also has a neutral flavor that works with virtually any seasoning.
- As a fun and tasty experiment, vary the seasonings to complement your main dish! Here are just a few options – take your pick!
- Parmesan and garlic
- Spicy Cajun
- Ranch
- Taco or fajita blend
- Italian herbs

Storing and Reheating
How To Best Store Leftovers
Fridge
Store leftover potatoes in an airtight container in the fridge for up to 3 days.
Freezer
Freezing is not recommended since the texture degrades.
How To Best Reheat Leftovers
Reheat in the air fryer at 375 ℉ for 4-5 minutes, or in the oven at 400 ℉ for 10 minutes. The microwave softens the texture and won’t crisp the potatoes, so use only if needed.

Made a written. Way too salty.
For anyone making it the first time and you don’t have all seasoning or seasoned salt, don’t put 1 teaspoon.
I’ve Never put 1 Tablespoon of salt or salt seasoning on potatoes but I tried it because I thought I just didn’t salt my food enough! Way too much. I realize it was an all purpose salt seasoning but if anyone wants just salt and make their own, 1/8 to 1/4 teaspoons it’s all the salt you need.
Way too much oil. You only need 1 Tablespoon. Most of it was wasted because the potatoes didn’t need all that oil coating. It’s air frying, it’s supposed to be healthier and it’s wasteful.
Thank you so much for the feedback! Please note the recipe called for 1 tablespoon of all-purpose seasoning, which is very different from 1 tablespoon of salt. I agree that much salt would be terrible!
